Western Turkey Bacon - Mushroom Omlette

Ingredients
3 slices Turkey Bacon - diced 1/4 cup ea. chopped onion, chopped red bell pepper, chopped canned mushrooms1/2 cup liquid egg substitute1 oz shredded colby jack cheese1 tsp. olive oil
Directions
Spray 8' non-stick skillet with cooking spray - preheat to med-hi and add olive oil. Saute onions and peppers for about 5 min., and add mushrooms and turkey bacon. Saute for bout 5 more min. Add egg substitute and stir. When eggs are almost set, sprinkle with the grated cheese, removed from heat and cover.
Let stand about 10 min. or until cheese melts.

Serving Size: makes 1 omelette
