School Kitchen Choc Chip Oatmeal Cookies

1 cup Splenda brown sugar blend1 cup sweet butter or oleo whichever you prefer1 cup Splenda sugar substitute1 tsp vanilla2 eggs2 cups flour1 tsp baking soda1/2 tsp salt2 cups Old Fashioned Oatmeal is what I like1 and 1/2 cups semi choc. chips (semi better than milk choc. in this recipe)1 cup of walnuts (optional, but much better with them in-maybe just put walnuts in when serving for others because will save a lot of calories to leave them out)
Blend together sugars, butter, egg and vanilla in mixer
Mix flour, soda, salt, oatmeal in separate bowl, add dry mixture slowly to sugar and butter mixture
Add walnuts and semi sweet chips to the mixer last, blend in-bake & enjoy!
Bake according to the recipe 8 to 11 minutes at 350degrees. I make a larger cookie and use an airbake cookie sheet so mine take around 12 to 15 minutes. Send home with your kids, you won't be able to stay out of them. My husband inspects school kitchens that's how I got the recipe. Of course, it's best with no substitutes and you can change up however you wish to skinny down this great recipe. I just entered the recipe the way I change it up. I know I will eat on weekends once in a while this winter with my husband, so better know what calories I am taking in. Yikes! Makes Approx. 60 cookies
