Ingredients
2 oz colby jack cheese, shredded1 large egg, scrambled1/4 cup red bell pepper, chopped1 oz of celery, chopped1/8 cup of raw onion, chopped1 oz Portobello mushroom caps, chopped1/2 tsp Bertolli extra virgin olive oil
Directions
Place extra virgin olive oil in skillet over medium low heat. Add chopped red bell pepper, celery, & raw onion. Cook until tender. Add scramble egg & cook until egg is firm. Add chopped mushroom caps & colby jack cheese. Remove from
heat. Serve after cheese has melted.
