Curried Chicken Salad

Ingredients
2 C Chicken, cooked, chopped1/2 C Celery, chopped1/4 C Green Onion, chopped1/4 C Light Mayonnaise1/4 tsp Salt1 tsp Curry Powder2 Tbsp Chutney
Directions
In a medium bowl, combine chicken, celery, and green onion.

For dressing, in a small bowl stir together mayonnaise, salt, curry powder, and chutney.

Pour dressing over chicken mixture. Toss to coat. Before serving, stir in 2 Tbsp coarsely chopped, toasted cashews or almonds, if desired.

Cover and chill for 1 to 4 hours. Serve as a sandwich filling, or on a bed of greens.
