Uncle Ben's Chicken and Rice Skillet

2 Tbs chopped onion1 Tbs margerine2 1/4 cup water1 box Uncle Ben's long grain wild rice1 chicken breast (precooked and cubed or raw)2 cups chopped lettuce1.5 cups chopped tomatos
Over medium heat, put onion, butter, and chicken in the pan. If chicken is already cooked, just warm a few minutes. If chicken is raw, cook till done. Add water, seasoning packet from box, and rice. When it boils cover and reduce heat to low. Cook for 25 minutes. When done, take off heat and stir in lettuce and tomatos. Serve. Recipe makes 4 servings. This is great to use with leftover chicken. Can also be made with Uncle Ben's 5 minute long grain wild rice, but tastes better with the 25 minute rice.
