Banana Oatmeal Pancakes (no eggs)

Ingredients
1 1/2c whole wheat flour1 1/2c all purpose flour2/3c wheat germ2/3c quick-cooking oats2Tbs baking powder1tsp cinnamon1/4tsp salt1/2c unsweetened applesauce3c soymilk2 bananas (peeled and mashed)6Tbs maple syrup2Tbs vegetable oil
Directions
Place dry ingredients into a bowl (flours, wheat germ, oats, baking powder, cinnamon, salt) blend

In a seperate bowl blend mashed bananas, applesauce, soymilk, syrup and oil. Once blended add to dry ingredients.

Blend wet and dry ingredients into a batter.

Heat griddle or nonstick skillet (if using something other than nonstick, grease the pan lightly.)

Measure out 1/4c of batter for each pancake, cook until brown on one side, flip, cook other side.

Makes approx. 24 pancakes, 1serving is 2 pancakes.
