Spinach Gnocchi

1 pound potatoes75 grams spinach1 tablespoon water2 tablespoons butter1 egg, beaten3/4 cup flour1 cup marinara sauce
Peel and cook the potatoes in a pot of boiling salted water for 20 minutes. Drain and mash well. Cook the spinach in 1 tablespoon water for 5 minutes until wilted. Drain and pat dry. Chop and stir into the potatoes.
Add the butter, egg, and 1/2 of the flour to the mixture. Turn on to a floured surface, gradually kneading in the remaining flour to form a soft dough. With floured hands, roll the dough into thin ropes and cut off 3/4 inch pieces. Press the center of each dumpling with your finger, drawing it towards you to curl the side of the gnocchi (making a shell shape). Cover and leave to chill.
Bring a pan of salted water to a boil and cook the gnocchi for 2-3 minutes or until they rise to the top of the pan. Drain well. Spoon marinara sauce over the top to serve.
