Coconut milk, sweet potato & chilli soup

Ingredients
1 onion, chopped1 tbsp vegetable oil1 red chilli, deseeded & chopped2 cloves garlic, crushed1 tbsp chilli powder1 tbsp ground coriander 400 ml can coconut milk600 ml vegetable stock900g sweet potatoes, peeled & slicedfresh coriander leaves
Directions
1. In a large oan, heat the oil over a really low heat.

2. Add the onion, garlic and chilli and cook till softened, about 10 mins.

3. Add the ground coriander and chilli powder and cook for 1 min.

4. Pour in the coconut milk and stock, and add the potatoes. Bring to a boil and simmer for 15 mins or till very soft.

5. Puree in a blender or with a stick blender, season to taste and scatter over coriander leaves to serve.
