Mexican Baked Eggs

Ingredients
Eggs, Salsa, Shredded Mexican Cheese, Avocado
Directions
Get two ramekins and put 1/4 cup salsa in each. Split 1/4 cup of shredded cheese between the two. Create a slight 'well' in the cheese and crack an egg into the center. Top with cracked pepper if desired.

Bake at 350 for 15 minutes

When done, chop 1/4 avocado and split between the two. Sprinkle with salt and enjoy!

Serve with 2 pieces of whole wheat toast
