Preheat oven to 250. Put a piece of parchment paper on a large baking sheets with sides.
Mix everything up to the butter in a large bowl.
In a small saucepan, mix butter and honey and heat until butter melts. Stir in salt and vanilla and remove from heat. Pour butter mix over the dry ingredients and mix with spatula until uniformly moist.
Spread on parchment paper evenly - should be about 1/2 inch thick.
Bake for about 1 hr. 15 min. until golden brown and firm.
Break into bars, or put pieces into a ziplock and pound it to make cereal pieces. Store in air-tight container or plastic bags.
