Black Beans and Rice

Ingredients
1.5 cups long grain white rice5 oz mixed vegetables1/2 onion, medium, diced1 clove garlic, diced1 tomato, medium, diced1 lb pork loined trimmed and chopped3 tbsp olive oil1 tsp lite salt4 oz cheddar cheese gratedmexican chili seasoning to tastecumin to tastecajun seasoning to tasteblack pepper to tastered pepper flakes to tastebalsamic vinegar to taste
Directions
cook rice al dente, while rice cooks, heat 1 tblsp oil and pinch red pepper in skillet. Add onions and garlic and cook till onions are tender, add mixed vegetables and stir over high heat till begining to brown slightly, add tomato, stir and remove from heat.

Add mixture to cooked rice, add seasonings, salt and beans, slightly drained, mix well.

In skillet, heat 1 tbsp oil and red pepper, add pork and cook till done. Add seasonings, vinegar and water, stiring well to loosen browned bits from pan and make a dark broth, add to rice. Mix all together and put in a greased baking dish, sprinkle with cheese, cover with foil and bake for 30 minutes at 350. Serve with sour cream and salsa
