Quick and Easy Spanish Rice

2 tablespoons olive oil2 tablespoons of chopped onions1.5 cups of white rice2 cups of low sodium chicken broth1 cup of chunky salsa
1. Heat oil in a large, heavy skillet over medium heat. Stir in onion, and cook until tender, about 5 minutes.
2. Mix rice into skillet, stirring often. When rice begins to brown, stir in chicken broth and salsa.
3. Reduce heat, cover and simmer 20 minutes, until liquid has been absorbed.
Serving Size: Makes 5 servings

This is really easy, even if you don't 'nail it perfectly' it's still excellent.
Quick, easy, tasty, everything you want in a 20-30 minute dish. Definitely use low sodium broth or use 1 tbs of bullion powder for both cups of water. Most salsas have salt and it will never be lacking. - 4/2/14
