Slow Cooker Sweet and Sour Chicken

Ingredients
1 pound chicken breasts cut into strips1 tbsp vegetable oil1 tsp salt 1/2 tsp pepper8 oz. can pineapple chunks1-1/2 to 2 cups sliced carrots2 tbsp soy sauce3/4 cup white sugar1/3 cup white vinegar2/3 cup water1/4 cup soy sauce1 tbsp ketchup2 tbsp ketchup1.5 tsp ground ginger2 cups broccoli (or snow peas)
Directions
Saute chicken in oil for 4-5 minutes. Drain. Sprinkle with salt and peper. Combine chicken, carrots, soy sauce and pineapple juice (from canned pineapple). Cover and cook on low for 3 hours.
In a saucepan, mix and boil sugar, vinegar, water, soy sauce, ketchup, and corn starch. Boil and stir until it has thickened. Add ginger and put in cooker. Add pineapple and broccoli. Cook on high for 15 minutes. Serve over rice.
