Oatmeal Pancakes -lactose free

Ingredients
1 1/2 C. quick cooking oatmeal1/2 tsp. baking soda3 tbl. brown sugar 1/2 C. low fat soy with 1/2 tsp. lemon juice (buttermilk)1/4 tsp. salt1/2 C. whole wheat flour1C. low fat soy milk2 Tbls. apple sauce
Directions
Combine the oatmeal, baking soda, sugar, salt and flour in a mixing bowl. Stir in milk, buttermilk mixture and apple sauce. Mix well. Drop the batter onto a hot, greased griddle or pan. When holes appear all over the surface, quickly turn and brown briefly the other side. Makes 24 pancakes.
