Eggless Egg Salad

Ingredients
I pound (1 block) extra-firm tofu3 T Vegenaise, 4 tbsp Nutritional Yeast4 Tbspn (remove)1 carrots, grated1/2 small onion, grated2 T dried parsley Salt, pepper to taste
Directions
Squeeze excess water from tofu with paper towels.

Crumble in bowl with you hands. Add remaining ingredients and mix well with a spoon.
