Zucchini Soup

Ingredients
6 cups shredded zucchini1 sliced onion2 cups chicken brothSalt, Pepper and Cumin (to taste)4 wedges light Laughing Cow Cheese (or 1/3 cup light cream cheese)Dill (to taste)
Directions
Place zucchini, onion and broth in a large pot. Add in salt, pepper and cumin. Bring to a boil and reduce to a simmer. Simmer for 15 minutes. Add cheese and dill. Process with a hand held blender until smooth. Serve warm.
