Quinoa Oatmeal Breakfast

Ingredients
1 c rolled oats1c quinoa, rinsed1/2 c toasted walnuts1/3 c agave nectar (recipe calls for natural sugar or maple syrup)1 t baking powder1 1/2 t cinnamon1/2 t sea salt2 c low fat milk1 large egg3 T unsalted butter, melted2 t vanilla2 bananasa, sliced1 c strawberries1 c blueberries
Directions
1. Preheat oven to 375 and spray olive oil in your pan to prevent sticking. I use a 12 inch cast iron skillet. Cut it like a pie and it is 8 servings. You can also use a casserole dish and make 9-12 servings, depends how you cut it.

2. Mix together oats, quinoa, half of walnuts, sugar(if using it, otherwise add agave nectar or maple syrup with wet ingredients), baking powder, cinnamon and salt.

3. In a separate bowl lightly beat egg and add in milk, vanilla, maple syrup or agave nectar (if using), and half of the slightly cooled butter.

4. Place banana slices on the bottom of greased pan. Top with 2/3 of the berries and cover with oat mixture. Pour wet ingredients over and make sure the dry ingredients are covered. Top with remaining berries and walnuts.

5. Bake for 40 minutes. Drizzle with remaining melted butter and additional maple sugar/sugar/agave nectar if desired.
