Roasted chicken thigh w herbs & steamed veg

Ingredients
1 pc chicken thigh2 tsp olive oil1/2 tsp thyme leaves, dried1/2 tsp sea salt1/2 tsp mild cajun seasoning1/2 cup cauliflowers1/2 cup broccoli
Directions
Marinate chicken thigh with olive oil, thyme leaves, salt and cajun seasoning (may substitute with freshly grounded black pepper). Set aside for 20 mins.

Preheat oven at 180 degrees celsius.

Heat a pot of water. When it boils, place chopped cauliflowers and broccoli into steamer insert inside the pot of boiling water for about 5 mins. Drizzle steamed vegetables with a little olive oil, if desired.

Grease roasting pan with a dash of olive oil. Place chicken thigh inside for roasting in oven for about 20 mins or until it flakes easily using a fork.
