Lentil Sauce over Pasta

Ingredients
3/4 C onion, chopped1 T olive oil1-1/2 C dried lentils4 C water1/2 t pepper1/4 t cayenne 1 can Italian diced tomatoes1 can (tomato paste1 t white vinegar1 1/2 t dried basil1 1/2 t dried oregano
Directions
Heat the olive oil in a large sauce pan; saute and garlic.

Add lentils, water; Bring to a boil.

Reduce heat; cover and simmer for 25 minutes.

Stir in the tomatoes, tomato paste, vinegar, pepper, cayenne, oregano and basil. Return to a boil.

Cover; reduce heat and simmer for an additional 45 minutes.

Serve over spaghetti or egg noodles. Pasta not included in the nutritional information.
