Fried Rice with Broccoli and Eggs

Great left over recipe. Whatever you have can go in this recipe
Cook brown rice according to directions on the box omitting margarine , butter, and salt.
Combine eggs with green onion and 2tbsp of water in a small bowl , beat, and then cook in large skillet or wok with 2 tsp of canola oil for 30 seconds ( a soft scramble mixture). Remove egg mixture and wipe pan clean with a paper towel.
Add 2 tsp of seseme oil and 1 tsp of canola to pan. Add the brocoli and carrots to pan and stir-fry for 2 minutes. Add mushrooms and rice ; stir-fry for 3 minutes. Add broth; cook 1 minute. Add cooked eggs, soy sauce, ground ginger and garlic; stir-fry 1 minute or until thoroughly heated.
Lastly, sprinkle the cashews on top.
Serving Size: makes 6 ( 2cups) serving
