gluten free pancakes with plums

2 red plums, seeded and quartered1/2 c maple syrup ( i only used 1/4 c)1T lemon juice1 piece star anise1 c. white rice flour2/3 c. corn or tapioca starch1 1/2 t. baking powder2 eggs, beaten1 c. nonfat milk1/2 c. low fat yoguartbutter cooking spray
Put plums, syrup, lemon juice and star anise in sauce pan and heat until almost boiling. Reduce heat and simmer for about 15 minutes. Leave plum quarters as is or I like to mash and have more "syrup".
As it simmers combine the rest of the ingredients and whisk till combined. Heat grill or skillet to high heat and drop by 1/4 c for larger pancakes or tablespoon for "dollar size". Cook till edges begin to bubble, turn and brown.
Serve in a stack with plum sauce on top! Enjoy!
