Shrimp Lettuce Wraps

Ingredients
1/2 cup cashews, chopped2 cloves garlic, crushed1/2 tsp red pepper flakes1 tsp ginger3 tbsp lite soy sauce2 tbsp vinegar8 oz shrimp, peeled and devinedRomaine lettuce leafs
Directions
Whisk together wet ingredients, garlic and red pepper. Set aside. In skillet over medium-high heat, add shrimp and cook until pink. Add in cashews and ginger with remaining sauce and cook for additional few minutes. Reduce heat and spoon over lettuce equally. Serve immediately.
