Garlicky Beans and Kale

Ingredients
1 lb Kale, washed, ribbed and cut into one-inch piecesone 15 oz can cannellini beans, drained and rinsedone 15 oz can diced tomatoeshalf cup of vegetable stock2 tsps olive oilthree cloves garlic, mincedseasonings to taste (basil, oregano, salt, pepper)
Directions
Makes four servings

Boil the kale in two quarts water until tender but still bright green...about 5 minutes

In a large skillet, heat oil over medium heat. Add garlic and saute a couple minutes, until tender. Add beans and heat through with garlic. Add Kale plus remaining ingredients and simmer for just a few minutes to heat through....serve immediately.
