Millionaire's Succotash

1/4 cup diced pancetta1 large onion diced2 cloves garlic1 pound fresh green beans/ strung and cut into serving pieces4 ears of corn cut off the cob1 medium tomato, roughly chopped1 cup chicken stock1/4th cup Nonfat greek yogurt
Heat a large skillet or saucier over medium high heat.
Render pancetta in a couple tablespoons of water. When crispy, remove with a slotted spoon to paper towel lined plate and set aside.
Remove all but one tsp of the fat from the pancetta.
Saute onion in the pancetta fat. When translucent, add garlic for 1 minute. When garlic is fragrant, add beans, corn, and tomato. Saute for 5 minutes until beans turn dark green.
Add chicken stock and simmer for 10 minutes.
Finish with greek yougurt. Taste and adjust seasonings.
Serving Size: Makes 6 1-cup servings
