1 head of cauliflower - florrets2 Tbsp Extra Virgin Olive Oil1/2 Onion chopped2 garlic cloves chopped2 cups vegetable broth1 cup watercurry to tastesalt and pepper to taste
Preheat oven to broil, place rack 6" from heat source. Soak cauliflower florrets in salted water for 20 minutes. Line baking sheet with foil, place cauliforwer florrets on sheet, spray with olive oil cooking spray.Broil cauliflower for 20 minutes. In large pot, cook onions, red peppers, and garlic in oil until translucent (5 minutes). Combine cauliflower, broth, water, curry, salt and peper in large pot. Use immersion blender to cream ingredients to desired consistency. If no immersion blender divide into thirds and use blender or food processor. Repeat until entire batch reaches desired consistency.
