Crock Pot Green Chile Chicken

Ingredients
4 large skinless, boneless Chicken Breasts 3 Small cans diced green chiles1 large can (24 oz?) *enchilada sauce1 10 oz can Rotel tomatoes and green chiles1 Tb Garlic1 tsp *Onion powder
Directions
place chicken breasts in crock pot on low, mix all other ingredients together and dump over the top. Cook low for 6/8 hours or high for about 3. Shred the chicken when hot and serve over white or brown rice. I also use it left over in enchiladas, tacos, nachos, burritos, over eggs in the morning, in an omelette. It's great. You can get a bit more heat with a hotter enchilada sauce or by adding more peppers. This is only warm-ish, My kids love it as does my particularly particular spouse. Great frozen and re-heated. EASY EASY EASY. - of course add salt and pepper if you'd like
