1 pound lean ground beef (93/7 or leaner), cooked & grease drained1 can corn, drained1 can green beans, drained2 medium potatoes, peeled, boiled & cut into bite-sized pieces14 baby carrots, boiled & cut into pieces1 c chopped onions24 oz. V-8 vegetable juice, low-sodium
Cook beef & onion, drain any grease off the meat. Add corn, green beans, baby carrots potatoes to the meat. Add V-8 vegetable juice. Heat to boiling, turn down heat & simmer for 45 minutes to allow the juice to infuse with the meat & vegetables.
Freeze any left-overs.
