Buttermilk Baked Chicken

Ingredients
16 oz. cups buttermilk2 oz. sour cream2 envelopes dry Italian salad dressing mix5 pieces sandwich bread, torn in pieces*3 pounds chicken*Additional bread may be necessary depending on the amount of chicken being coated
Directions
Preheat oven to 450. Line baking sheet with foil.

Whisk together buttermilk, sour cream, one package of dressing and salt together in a large bowl. Add chicken, coating each piece, cover and refrigerate for 30 minutes to 1 hour.

In a food processor, process bread and other packet of dressing together. Spread on prepared baking sheet and bake until dry and golden brown, between 5 and 10 minutes depending on the type of bread. Stir occasionally throughout baking process for even browning.

Prepare another (or same) baking sheet by covering with foil and spraying with cooking spray. Remove chicken from mixture, letting excess fall back into bowl. Dredge through bread crumbs and place on baking sheet. Once finished, spray chicken with cooking spray.

Bake for 10 minutes at 450. Reduce temperature to 400 and bake an additional 20 to 25 minutes or until done.
