Coach Nicole's Grown Up Grilled Cheese

Ingredients
1 medium egg2 slices reduced calorie whole-wheat bread2 tsp butter2 tsp dijon mustard1 oz cheddar cheese, grated or sliced (or 1 cheese slice)1 small tomato, thinly sliced3-5 fresh basil leaves, washed and roughly chopped1 thin slice of red onion, chopped or sliced in halfsalt and pepper to taste
Directions
Heat cast iron or non-stick skillet over medium heat.
Fry the egg (use some cooking spray if necessary to prevent sticking).
As egg cooks, butter one side of each slice of bread, and add mustard to opposite side of one of the slices.
Assemble your sandwich, including the fried egg in this order:
Bread (butter side out)
Cheese
Tomato slices
Basil
Red onion
Salt and pepper to taste
Fried egg
Bread

Heat the sandwich on low to medium heat (in the same skillet you used to fry the egg) until golden-brown. Be careful when flipping the sandwich so that it doesn't fall apart.

Let cool about 1 minute and enjoy!

    i made this abit differant i beat the egg with the salt pepper,basil put the cheese and tomatoe in the sandwich then dipped the sandwhich in the beaten egg then cooked in the skillet.brought back memories of childhood breakfasts when my father was still alive.it was about the only thing he cooked. - 4/1/12
