Juice of 1 lemon1 handful of small prawns, shelled 2 large artichoke hearts1 tablespoon of fat-free plain Greek yogurt1 teaspoon of mustard1 tablespoon of balsamic vinegar2 pinches of fine herbs1 pinch of salt and pepper
1. Marinate prawns in lemon juice, salt and pepper.
2. Prepare 2 artichoke hearts.
3. Mix yogurt, mustard, vinegar and fine herbs together until a smooth homogenous texture is achieved.
4. Mash one artichoke heart with prawns and work in the yogurt sauce..
5. Fill the second artichoke with the prepared artichoke and yogurt mixture and serve cold.
