Ingredients
2 poached eggs1 slice ripe tomato1/2 ripe avocado5-6 leaves of wilted spinach1 toasted English muffin
Directions
Poach 2 eggs to desired hardness (personally I like them runny, but each to his own)
Toast English muffin to desired darkness
Layer ingredients on top of muffin - spinach, tomato, eggs, avocado, sauce.
Serve warm
