Greek Panini

Ingredients
2 slices crusty bread1/2 cup raw spinach2 slices red onion, chopped1 tsp. garlic1 small tomato, sliced1/4 cup feta cheese8 jumbo black olives, slicedolive oil, 2 Tbsp.
Directions
Lightly saute the onion and garlic in a small amount of olive oil just until soft. Add the spinach and cook until the spinach wilts.Coat one side of both slices of bread with olive oil. Layer the spinach mixture, feta cheese, tomato, and chopped black olives on 1 slice of bread. Top with the other slice of bread making sure the olive oil is on the outside. Grill in a panini maker, on your outside grill, or on a frying pan on the stove.
