Tofu-Brown Rice-Cinnamon cookies

340g (12oz) firm tofu1 cup cooked brown rice6 tsp sugar3 tsp splenda3 tsp agave nectar or honey1/4 cup sultanas (golden raisins)2 tsp cinnamon, divided1/4 cup shredded coconut
1. Heat oven to 180c/350F
2. Combine first six ingredients and 1 tsp cinnamon in a bowl and mix well to combine
3. Form into small patties and place on a cookie tin (use baking parchment,a silicon mat or a non-stick tin, else oil tin well).
4. Mix remaining cinnamon and coconut, use to top cookies
5. Bake 15-20 minutes, or until browned.
Serving Size: Makes 15 small cookies
