Carolyn's Sweet Potato Crusted Grouper

Ingredients
This is a gourmet restaurant quality fish dish that you will absolutely love. My friend owns a very popular restaurant and this is my version of his most popular fish dishes on his menu.1 Sweet potato, grated1 Cup Whole Wheat Flour1 tsp. Salt1/2 tsp. Black Pepper4 Fillet's of Grouper or any other white fish3 Egg whites3 Tbsp. Canola Oil
Directions
Peel and grate the sweet potato and place in a shallow bowl and set aside.
Place the flour and salt & peper in a seperate bowl. In another seperate bowl beat the egg whites and set aside.

Heat your saute pan and add the oil. Dip the fish into the flour, then in the egg and last into the grated sweet potato. Place in heated pan and saute for 3 minutes each side.

You can serve this over mixed greens and your favorite lowfat or fat free dressing.
