Coconut Curry Shimp Soup

12 oz uncooked shrimp1 large onion, chopped small3 large carrots, chopped into bite sizes1 medium sweet potato, chopped into small pieces2 cans Thai Kitchen coconut milk, lite1 pkg Golden Curry sauce mix (use 2 squares).1 pkg Thai Kitchen thin rice noodles
Cook and peel shrimp and put aside.
Slightly brown onion in soup pot then add carrots and sweet potato.
Add both cans of coconut milk and simmer to soften vegetables and add shrimp to soup pot.
Make thai rice noodles according to package directions.
Serve with noodles on bottom of bowl and cover with soup.
