Savory Beef Stew

1# beef stew meat1 T olive oil1 large finely chopped onion5.5 c beef cooking stock1 t dried thyme1 t dried marjoram1 medium bay leaf1# red potatoes2 large carrots chopped1 T red bell pepper chopped2 c beef cooking stock1/4 c flour1/4 c tomato paste1 t dried thyme1 t Italian seasoning3/4 t pepper
Coat pan with cooking spray and brown meat. Remove meat. Add olive oil and cook onion until soft. Add meat, any juices, 5.5 c broth, thyme marjoram and bay leaf. Increase heat to high and bring to a boil. Reduce heat and simmer, covered, 1 1/2 hours or until meat is tender.
Cut potatoes into chunks and slice the carrots. Add to the pot. Simmer, covered, 30 minutes. Add the bell peppers.
In a medium bowl, whisk the remaining ingredients. Pour into the stew. Increase heat to high and bring to a boil, stirring constantly. Reduce heat to low. Cook 5 minutes, or til thickened, stirring constantly. Remove the bay leaf before serving.
