Green Gazpacho

Ingredients
Tomatillos or Green TomatoesCucumber (seeded/skin on)AvocadoYellow Pepper (or Red or Green if you prefer)JalapenoScallionsCilantroVinegar - cider, riceOlive OilSalt to taste
Directions
Chop tomatillos, cukes, avocados, cilantro, peppers, jalapeno, scallions. Toss in a blender in batches with the oil, vinegar and salt. Blend until creamy (may need to add a bit of water too).
