Ingredients
1lb Chicken1 Tbsp Extra Virgin Olive Oil1 medium green bell pepper, shredded or diced1 Cup Carrots, shredded1 Cup Mushrooms, shredded or diced4 Scallions, diced3 Cloves Garlic, minced3 Tbsp Lite Soy Sauce1-2 tsp Rice Vinegar1/4 tsp Ground Black Pepper1/4 tsp GingerGround yellow mustard and red chipotle pepper seasoning to taste1 Head of Lettuce
Directions
1. Sauté chicken in olive oil until cooked. Take out and set aside to cool.
2. In the same pan, saute the scallions and garlic. Add the soy sauce, vinegar, and spices and simmer slightly.
3. Either dice or shred the chicken, then add to the pan.
4. Slowly mix the bell pepper,carrots, and mushrooms into the pan - making sure everything is covered in the sauce. Keep the mixture on simmer until it is al heated.
5. Serve on lettuce leaves/cups.
