Mexican Eggs with Pintos

Ingredients
Directions
1/2 cup Onions, raw, chopped 3/4 cup cooked Pinto Beans4 Eggs, lightly beaten1/3 cup Cheddar Cheese, shredded1/8 tsp. Pepper, red or cayenne 1 tbsp Chili powder***Can use egg whites and/or low fat cheese to lower fat content. Regular eggs and cheese used when calculating nutritional information***
Using non-stick pan, spray some additional no-stick spray on pan.
Saute onions slightly (may add approx 1 tsp. water to help saute, if necessary.)
Add seasonings to onions. stir.
Add beans, saute a couple of seconds mixing well.
Add eggs. Flip if desired. Cook until set. Top with cheese, just before removing from pan. Can sit a minute with cover on to melt cheese, if desired.
Serve with salsa or hot pepper sauce on the side.
