Cocoa-Oaty Cookies (from Forks over Knives)

1/3 cup pure maple syrup1/3 cup non-dairy milk (I use almond)1/4 cup unsweetened cocoa3 Tbsp Peanut Butter (I use Peanut Butter and Co. Dark Chocolate Dreams)1 tsp vanilla extract1 1/2 cups Old-fashioned Oats1/4 cup walnuts (optional)
In a small saucepan heat the syrup, milk, and cocoa until boiling then simmer for about 3 minutes, stirring constantly. Add the peanut butter and stir until dissolved. Remove from heat then add the rest of the ingredients. Combine well then form into cookies.
*Note: the recipe in the book didn't indicate what to do after forming the cookies. To me, these appear to be "no-bakes" so I put them on parchment paper and put in the freezer. If anyone has made anything similar to this and knows of a different way to make (bake? freeze?) them, please leave a comment, thanks!
