Red Lentil Salad

Ingredients
1 cup dried red lentils5 cups water1 medium diced tomato1/2 cup fresh parsley finely chopped1/2 cup cooked bulger1 medium carrot diced1/2 cup red onion finely diced1/4 cup lemon juice3 tbsp olive oil2 minced garlic cloves1-2 tbsp balsamic vinegar (2 if you like sweeter dressing)1 tsp dried thymesea salt and pepper to taste
Directions
Bring water and lentils to a boil. Reduce heat, cover and simmer for 20-25 minutes or until tender. Rinse under cold water and drain. Place in a large bowl to cool

Meanwhile in a jar with a tight fitting lid, combine lemon juice, oil, garlic, vinegar, thyme, and salt and pepper. Shake well and set aside

In a large bowl combine lentils, tomato, parsley, bulgar, carrots and red onion. Pour the dressing on top and gently stir until evenly coated. Place in refrigerator for 2 hours before serving.

Serving Size: makes about 5 cups
