Sausage & Potato Soup

Ingredients
3 tbsp. olive oil1 1/2 c. chopped onion1 c. chopped celery1 c. chopped carrots6 clove garlic, minced10 c. chicken broth/ 3 Knorr condensed broth packets & 10 c. water8-10 medium potatoes, cut into cubes1 pound Italian sausage, cooked1 large bunch kale or spinach
Directions
In large pot cook onion, celery and carrots in olive oil for about 15-20 minutes or until onions have sweated. Add broth, garlic and potatoes. Bring to a boil and simmer for 20-25 minutes. Add sausage and kale; cover and simmer until kale is soft.
