Homemade Thai "Amazing" Tofu

Ingredients
Tofu, extra firm, 11.5 grams (about 3 "servings")*365 Organic Peanut Sauce, 1/3 cup1 shallot, ends cut off, sliced vertically*Skippy Natural Creamy Peanut Butter, 1 tbsp*Coconut Milk, 1/3 cupGreen Peppers (bell peppers), 1 cup, strips*Peppers, sweet, red, fresh, 1/3 cup stripsGinger, ground, 1 tspGarlic, 1 tspSoy Sauce Light, 1 tbsp*Extra Virgin Olive Oil, 1 tbsp*Green Chili Peppers, canned, 1 tbsp
Directions
Heat oil in a medium skillet. Add tofu, peppers and shallot and sautee until coated in oil and begin to sizzle. Add garlic, soy sauce, ginger, chilis and stir to coat. Add 365 Organic Peanut Sauce, stir to coat. Drop in the peanut butter and allow it to melt and spread evenly throughout the veggies and tofu. Sprinkle in red pepper flakes if you wish to turn up the heat even more. Makes 2 servings. Serve with fresh cilantro and ground peanut if you wish (but that will add more cals!)
