1 pound Roasting Chicken, dark meat, cut into strips or bite sized pieces1whole onion, raw, chopped4 oz Green Chili Peppers, canned1 cup Yellow Sweet Corn, Frozen,1/2 cup Beans, pinto, canned, rinsed1/2 cup Kraft Minute Whole Grain Brown Rice3 tsp Chicken Boullion Concentrate or chicken stock to make three cups (omit water if using stock)1 tbsp Cumin ground3 cloves Garlic, minced1/2 tsp salt or to taste1/2 tsp Pepper, black1/2 tsp Pepper, red or cayenne1.5 tsp Oregano, ground1/2 tsp Rubbed Sage3 cups Water, tap
Brown chicken in a med or large pot with seasonings. Add onion, green chilies and garlic. simmer till chicken is no longer pink. Add chicken bouillon, water (or chicken stock) and beans. Bring to a boil. Add rice, remove from heat, stir and cover until Rice is done.
