Simple Oven Poached Salmon

1 lb. salmon fillet1 lemon, sliced4-5 sprigs fresh dill1 cup white wineWater
Preheat oven to 350 degrees F.
Place lemon slices and dill in a non-reactive casserole dish. Lay salmon, skin side down, on top. Add wine and then pour just enough water into the dish to cover the fish. Cover with foil and poke holes in it to allow steam to escape.
Place in 350-degree oven for approximately 25 minutes, depending on the thickness of the fillet, but be careful not to overcook.
Serving Size: 4
