Samosa Chicken Burgers

1 lb ground chicken1 small potato, minced1/2 small onion, minced1 small carrot, minced2 cloves garlic, minced1 T lemon juice1 t yellow curry powder1/2 t chili powder1 t tumeric1/2 t fresh ginger, grated1/2 t cuminPepper to taste
I use a hand blender with a chopper foot accessory to mince the potato, onion, carrot and garlic. It saves a lot of time and gets the pieces very small so they incorporate into the meat better.
The spice level in this is very mild, but can be easily adjusted to taste.
Spray skillet with non-stick spray and heat over medium heat. Saute onions and garlic for 3-4 minutes, then add potato, carrot and garlic. Saute for an additional 3 minutes. Add spices and ginger, stir until fragrant and evenly blended. Add lemon juice, stir, then remove from heat. Let stand until slightly cooled.
Put vegetable mixture and ground chicken in a large bowl. Mix together thoroughly with hands.
Divide mixture into four equal parts and form into patties.
[Note: Be sure to wash your hands well right afterwards. Aside from the raw chicken aspect, the curry powder and tumeric may stain your hands.]
Grill or broil for approx 25-30 minutes, flipping half way through cooking time. This length of time is needed because of the potato. Serve on bun of your choice (Not included in nutrition info)
