Quinoa Pilaf

2 tsp grapeseed oil1 bunch scallions1 large carrot, diced1/2 large red pepper, diced1 stalk celery, chopped1 cup quinoa, thoroughly rinsed2 cups fat-free, low-sodium chicken broth2 tablespoons olive oil (optional)salt and pepper to taste
Always rinse quinoa before using, to get rid of its bitter coating.
Heat grapeseed oil in a medium saucepan. Sauté vegetables for 5 minutes. Add rinsed quinoa and toast for 2-3 minutes. Add chicken broth, bring to a boil, cover and simmer for 15 minutes, or until all the water is absorbed and the quinoa is tender. Add olive oil, salt and pepper to taste.
