Ingredients
2 c. cornmeal (fine grind)1 c. wheat flour2 tsp. baking powder1/2 tsp. salt1 c. milk or milk substitute1 c. water2 tsp. cider vinegar1 egg2 T. oil
Directions
Preheat oven to 350F. Place greased cast iron skillet in oven as it preheats (use at least an 8-inch skillet with 1-inch tall sides to fit all batter).

Mix dry ingredients.

Mix wet ingredients.

Mix dry and wet ingredients just till combined (lumps are OK).

Pour into preheated skillet and pop into preheated oven. Cook for about 30 minutes, till done.
