Weight Watcher's Modified French Onion Soup

1 Tablespoon extra virgin olive oil3 large sweet onions (I prefer Vidalia), sliced1 tablespoon Worcestershire sauce4 cups fat free, sodium free beef broth (I use homemade)1/2 cup red wine (I like merlot)1 tablespoon dried thyme leaves
Heat the olive oil in a large pot on medium high heat. Add the sliced onions and saute for about 10 minutes until they are soft. Add the worcestershire sauce and stir. Reduce the heat to low and cook, stirring occasionally, for about 25 minutes , until the onions are very soft and golden.
Add the broth, wine and thyme. Bring the soup to a boil. Reduce the heat and simmer partially covered for 40 minutes or until the flavors are well blended. Serve as is or with french bread and mozzarella. You can reduce the amount of thyme if you don't like such a strong flavor.
