Garlic Roasted Butternut Squash

1 butternut squash (approx 3 lbs), peeled + chopped1 Tbsp dried parsley1/2 Tbsp olive oil1/2 Tbsp vegetable broth3 Tbsp minced garlic1 tsp kosher salt1/2 tsp black pepper3 Tbsp parmesan cheese, grated
In a large bowl, combine the parsley, olive oil, vegetable broth, garlic, salt and pepper. Add squash and toss to coat. Transfer to a shallow baking dish or cookie sheet. Bake, uncovered, at 400 degrees F for 45-50 minutes or until squash is tender. Sprinkle parmesan cheese on top with about 15-20 minutes remaining.
